Ingredients

  • 4 Tbsp. butter
  • 3 eggs
  • 1 c. flour
  • 1 c. milk
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 lb. grated Monterey Jack cheese
  • 2 (10 oz.) pkg. thawed spinach

Instructions

  1. In a 9 x 13 x 2-inch baking pan, melt butter in a 300° oven.
  2. In a bowl, beat eggs; add flour, milk, salt, and baking powder. Mix well.
  3. Pour the egg mixture into the melted butter in the baking pan.
  4. Bake for 35 minutes.
  5. Remove from oven and let cool for 45 minutes.
  6. Cut into bite-size pieces and serve.
