Ingredients

  • 3 cups water
  • 2 pounds stewing beef
  • 2 cups chopped onion
  • 2 teaspoons chopped ginger root
  • 2 pounds fresh spinach
  • 1/4 cup vegetable oil
  • 2 cups chopped fresh tomato
  • 3 tablespoons tomato paste
  • 1/4 teaspoon cayenne pepper

Instructions

  1. In a large Dutch oven, combine water, stewing beef, 1 cup chopped onion, and 1 teaspoon chopped ginger root.
  2. Bring to a brisk boil; lower heat, cover, and simmer for 1 hour.
  3. While beef is simmering, wash spinach; chop and set aside.
  4. In a large frypan, heat vegetable oil.
  5. Add chopped tomato, remaining onion, tomato paste, and beef stock.
  6. Cook for 15 to 20 minutes over low heat.
  7. Add the beef; cover and simmer for 15 minutes longer.
  8. Add salt to taste, cayenne pepper, remaining ginger, and chopped spinach.
  9. Cover and let simmer for 10 minutes.
  10. Serve with rice, yams, or plantains.
