Spinach Stuffed Sole Fillets

- Melt butter in saucepan; stir in flour, salt and paprika. Gradually add the half and half.
- Cook and stir over medium heat until thickened.
- Add 1/2 cup of cheese, lemon peel and juice and stir until cheese melts.
- Add 1/3 cup cheese sauce to cooked spinach and green onion.
- Stir to blend.
- Place some spinach mixture on each fish fillet and roll up.
- Place seam side down in shallow baking dish.
- Spoon remaining cheese sauce over fish. Bake at 350° for 30 to 35 minutes until fish flakes easily with a fork.
- Garnish with additional slices of green onion.
- Serve fish rolls with rice and top with remaining cheese sauce.
- Serves 6.
