A fresh, light spring tuna salad combining spinach, olives, and scallions with a tangy French dressing, perfect for a healthy, quick lunch or side dish.

Ingredients

  • 1 pt. fresh clean spinach
  • 2 Tbsp. chopped scallions
  • 2 Tbsp. chopped olives
  • 1/2 tsp. salt
  • 1 (12 oz.) can chunk tuna in water
  • 2 Tbsp. French dressing

Instructions

  1. Mix the chopped spinach, scallions, and olives in a bowl.
  2. Sprinkle with salt over the mixture.
  3. In a separate bowl, combine the tuna and French dressing, and let stand for 10 to 15 minutes.
  4. Just before serving, toss the spinach mixture with the tuna and dressing mixture.
  5. Serve with additional French dressing and hard-cooked eggs if desired.
