Ingredients

  • 1/2 cup shortening
  • 1 cup brown sugar, firmly packed
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup all-purpose flour, sifted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups mashed potato flakes

Instructions

  1. Cream shortening and brown sugar until well combined.
  2. Add egg and vanilla, then mix well.
  3. Combine flour, baking powder, salt, and potato flakes in a separate bowl.
  4. Gradually add the dry ingredients to the shortening mixture, mixing thoroughly.
  5. Stir in nuts if desired.
  6. Let the batter set for 30 minutes.
  7. Drop batter by teaspoonfuls onto a greased cookie sheet.
  8. Bake at 375°F (190°C) for 10 minutes, avoiding overbaking.
