Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 2/3 cup grated yellow squash
  • 1 egg
  • 3/4 cup milk

Instructions

  1. Combine flour, baking powder, salt, sugar, and grated yellow squash in a large bowl.
  2. Make a well in the center of the dry ingredients.
  3. In a separate bowl, beat the egg and then add milk and oil.
  4. Pour the wet mixture into the well of the dry ingredients and stir until just moistened.
  5. Spoon the batter into lightly greased muffin pans, filling each about two-thirds full.
  6. Bake at 350°F (175°C) for 20 to 25 minutes until golden brown and a toothpick inserted in the center comes out clean.
