Ingredients

  • 2 lb yellow squash, cooked
  • 2 Tbsp sugar
  • 2 eggs, beaten
  • 1/2 cup grated Cheddar cheese
  • 1 stick butter, melted
  • salt to taste
  • buttered cracker crumbs
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Mix cooked yellow squash, sugar, beaten eggs, grated Cheddar cheese, melted butter, and salt in a large bowl.
  3. Pour the mixture into a large buttered casserole dish.
  4. Top with chopped pecans and buttered cracker crumbs.
  5. Bake for 20 minutes until golden and bubbly.
