Ingredients

  • 1/3 cup instant nonfat dry milk
  • 1/3 cup cold water
  • 2 cups mashed potatoes
  • 1/4 cup finely chopped onion
  • 1 egg
  • 1 teaspoon salt
  • dash of cayenne pepper
  • 1 cup crushed corn flakes
  • 1/2 cup grated cheese
  • 3 tablespoons melted margarine

Instructions

  1. Mix milk and water in a bowl until smooth.
  2. Add mashed potatoes, chopped onion, beaten egg, salt, and cayenne pepper; beat until light and fluffy.
  3. Transfer the mixture to a 1 1/2-quart casserole dish.
  4. Combine crushed corn flakes, grated cheese, and melted margarine; spread over the potato mixture.
  5. Bake at 375°F (190°C) for 20 to 25 minutes until golden and bubbly.
