Squash Quiche Pie

Ingredients

  • 1 1/4 c. shredded yellow squash
  • 1/2 c. zucchini squash
  • 1/2 c. shredded onion
  • 1/2 c. shredded Cheddar cheese
  • 1 Tbsp. vegetable oil
  • 1/2 c. Bisquick
  • 3 eggs
  • 2 Tbsp. chopped parsley
  • 1/4 tsp. salt

Instructions

  1. Mix squash, onion, salt and pepper; set aside.
  2. In second bowl, beat eggs, then add oil, Bisquick, cheese and parsley; mix well.
  3. Add squash mixture; mix thoroughly.
  4. Pour into greased 8 x 8-inch dish and bake at 350° for 20 to 30 minutes, until golden brown and set in middle.
  5. Serve while hot.
