Squash Ring

A savory squash ring dish featuring tender cooked squash and onions, baked to golden perfection, and filled with vibrant green beans for a delightful presentation and flavor.

Ingredients

  • 2 medium onions, chopped
  • 1/4 cup margarine
  • 2 pounds yellow squash, cooked and drained
  • 2 eggs, beaten
  • 1/2 cup sugar
  • salt to taste

Instructions

  1. Saute chopped onions in margarine until translucent.
  2. Add cooked and drained yellow squash, beaten eggs, sugar, salt, and pepper to the onion mixture.
  3. Cook on top of stove until the mixture thickens.
  4. If the squash doesn't mound when dropped from a spoon, add 2 tablespoons of flour and mix well.
  5. Pour the mixture into a well-greased and floured ring mold.
  6. Bake in a preheated oven at 350°F (175°C) for 1 hour.
  7. Remove from oven and fill the center of the ring with green beans before serving.
