Juicy steak and tender sweetbreads are skewered with bacon and seasoned with tarragon, creating a flavorful and hearty dish perfect for grilling or entertaining guests.

Ingredients

  • 2 lemons
  • 1 lb. veal sweetbreads
  • 1 tsp. salt
  • 4 slices turkey bacon
  • 1 lb. sirloin tips
  • ground pepper
  • 2 cloves garlic, minced
  • 1 stick light butter
  • 2 Tbsp. dried tarragon
  • 4 (12-inch) skewers

Instructions

  1. In a large saucepan, squeeze lemons and add salt. Bring to a boil.
  2. Combine sweetbreads with 1 quart of water in the pan and simmer for 15 minutes.
  3. Drain the sweetbreads and cut into 1-inch cubes.
  4. Saute turkey bacon slices until cooked.
  5. Thread the sweetbreads, sirloin tips, and bacon onto skewers.
  6. Melt light butter and mix with dried tarragon.
  7. Brush the skewers with the tarragon butter and grill until cooked through.
