Stilton & Walnut Shortbreads

Ingredients

  • 1 c. flour
  • 1/3 c. butter
  • 1 tbsp. sugar
  • pinch salt
  • pinch nutmeg
  • pinch cayenne pepper
  • 4 oz. Stilton cheese, crumbled
  • 1/4 c. walnuts, finely chopped
  • 24 walnut halves

Instructions

  1. Preheat oven to 350 F.
  2. Place flour, butter, sugar, salt, nutmet and cayenne pepper in a food processor and pulse to combine. Add the Stilton cheese and chopped walnuts and pulse until the dough is crumbly and just holds together when pinched between two fingers.
  3. Turn dough onto a piece of baking parchment. Gather into a ball, flatten into a disc and place a second piece of parchment on top. Roll the dough until 1/4" thick. Cut into cookies with a 2" cutter. Line a baking sheet with parchment and place cookies 1" apart. Gently press a walnut half on top of each cookie.
  4. Bake for 12 to 15 minutes or until just set, not browned.
