Ingredients

  • 1/2 lb. boned chicken
  • 1 lb. can pineapple tidbits, drained
  • peanut oil
  • chicken broth or stock
  • cornstarch
  • sesame oil (optional)
  • 1 tsp. brandy
  • 1 tsp. soy sauce
  • 1 tsp. sugar

Instructions

  1. Cut the chicken into thin slices.
  2. Heat several tablespoons of oil in the bottom of a wok.
  3. Add pineapple tidbits, a few dashes of salt, and enough broth to cover.
  4. Cook for 11 minutes.
  5. Add the chicken, diluted cornstarch, sesame oil (optional), brandy, soy sauce, and sugar.
  6. Cook for 2 to 3 minutes, stirring constantly.
  7. Serve.
