- Cream butter and sugar together until light and fluffy.
- Add one egg at a time, beating well after each addition. Mix in self-rising flour, almond extract, vanilla, and cake spice.
- Beat the mixture thoroughly until smooth.
- Coarsely chop the crystallized fruits and nuts, then fold them into the batter.
- Pour the batter into a large greased pan and bake in a 375°F (190°C) oven for 15 minutes.
- Remove from oven and stir the mixture; repeat this stirring process three times at 15-minute intervals.
- Prepare a tube cake pan by greasing it and lining with brown paper. Pack the hot cake mixture into the pan.
- Bake the cake in the oven for an additional 15 minutes.
- Allow the cake to stand in the pan for about 15 minutes before turning out.
