Ingredients

  • 1 lb. red crystallized cherries
  • 1/2 lb. white crystallized pineapple
  • 1/2 lb. green crystallized pineapple
  • 3 pt. shelled mixed nuts
  • 1/4 lb. raisins
  • 1/2 lb. oleo or butter
  • 1 c. self-rising flour
  • 1 tsp. almond extract
  • 1 c. sugar
  • 4 large eggs
  • 2 tsp. vanilla
  • 2 tsp. cake spice mix

Instructions

  1. Cream butter and sugar together until light and fluffy.
  2. Add one egg at a time, beating well after each addition. Mix in self-rising flour, almond extract, vanilla, and cake spice.
  3. Beat the mixture thoroughly until smooth.
  4. Coarsely chop the crystallized fruits and nuts, then fold them into the batter.
  5. Pour the batter into a large greased pan and bake in a 375°F (190°C) oven for 15 minutes.
  6. Remove from oven and stir the mixture; repeat this stirring process three times at 15-minute intervals.
  7. Prepare a tube cake pan by greasing it and lining with brown paper. Pack the hot cake mixture into the pan.
  8. Bake the cake in the oven for an additional 15 minutes.
  9. Allow the cake to stand in the pan for about 15 minutes before turning out.
