Ingredients

  • 1/2 tsp unflavored gelatine
  • 1/4 c cold water
  • 1 c chopped ripe berries
  • 2 to 4 Tbsp granulated sugar
  • 1 tsp lemon juice
  • 1/3 c light corn syrup

Instructions

  1. In a small heatproof custard cup, sprinkle gelatin over cold water.
  2. Stir and set aside for 10 minutes.
  3. Place the dish in a small pan of water and heat gently until the gelatin mixture is completely dissolved.
  4. Cool the mixture.
  5. Place strawberries in a medium bowl and sprinkle with sugar.
  6. Stir gently and set aside for 15 minutes.
  7. Combine the cooled gelatin mixture, strawberries with their juice, lemon juice, and corn syrup.
  8. Spoon into ice pop molds and freeze for at least 2 hours.
