Ingredients

  • 1 white or yellow cake mix
  • 4 cups diced rhubarb
  • 3 ounces strawberry Jell-O
  • 1 cup sugar
  • 2 cups mini marshmallows

Instructions

  1. Mix the cake mix according to the package directions.
  2. Cover the bottom of a 9 x 13-inch pan with diced rhubarb.
  3. Sprinkle strawberry Jell-O over the rhubarb.
  4. Sprinkle sugar over the Jell-O.
  5. Cover with mini marshmallows.
  6. Pour the prepared cake batter over the marshmallows.
  7. Bake for 30 to 35 minutes.
  8. Serve with ice cream or whipped cream.
