Strawberry Rhubarb Soup

Ingredients

  • 1 pt. strawberries, hulled and sliced
  • 1 lb. rhubarb, trimmed and cut into chunks
  • 1 1/4 cups orange juice
  • 1/2 cup sugar
  • 1/4 cup orange sections

Instructions

  1. In a 3-quart saucepan, heat strawberries, rhubarb, and orange juice to boiling. Simmer about 10 minutes; remove from heat.
  2. Add sugar; cool.
  3. In a covered blender, at low speed, blend the soup half at a time until smooth.
  4. Pour the soup into a bowl; add orange sections.
  5. Refrigerate covered until chilled.
  6. Serve in a chilled bowl; garnish with strawberry slices.
