Ingredients

  • 2 lb. fresh string beans, sliced in strips
  • 3 medium zucchini
  • 1 large onion, sliced
  • 2 Tbsp. vegetable oil
  • dash of salt
  • 1 tsp. thyme
  • 1/2 tsp. marjoram

Instructions

  1. Oil the bottom of a steel pan or Dutch oven.
  2. Add the sliced onion and cook until translucent.
  3. Add the sliced zucchini with skin on, and cook for a few minutes.
  4. Add the sliced string beans and herbs (thyme and marjoram).
  5. Pour in 1/4 cup water and cover tightly.
  6. Cook on very low heat for about 20 minutes until vegetables are tender.
