Creamy stuffed baked potatoes feature fluffy potato pulp mixed with sour cream, cream cheese, and onions, topped with paprika for a flavorful, comforting dish suitable for any occasion.

Ingredients

  • 4 baked potatoes
  • 1/2 cup sour cream
  • 1 (3 oz) package cream cheese
  • salt to taste
  • pepper to taste
  • 2 Tbsp instant onion or 1/4 cup onion

Instructions

  1. Cut baked potatoes in half and scoop out the pulp into a mixing bowl.
  2. Add sour cream, cream cheese, onion, salt, and pepper to the bowl.
  3. Combine ingredients and stir until well mixed.
  4. Gradually increase the mixer speed and beat until potatoes are fluffy.
  5. Spoon the potato mixture into the potato shells.
  6. Place on a baking sheet and sprinkle with paprika.
  7. Bake in a preheated oven at 400°F for 15 minutes.
