Ingredients

  • 1 medium flounder fillet, lightly salted
  • 1/2 lb crabmeat
  • 1 egg, beaten
  • 1 onion, sliced
  • 4 to 5 medium potatoes, quartered
  • 3 to 4 strips bacon
  • 1 cup water

Instructions

  1. Add beaten egg to crabmeat and mix well.
  2. Place one fillet in a foil-lined pan.
  3. Spread crabmeat mixture on the fillet.
  4. Top with the second fillet.
  5. Add quartered potatoes and sliced onion around the fish.
  6. Season with salt and pepper, then top with bacon strips.
  7. Add about 1 cup of water to the pan.
  8. Cover the pan with foil.
  9. Bake for 45 minutes at 350°F.
  10. Remove foil and bake for an additional 15 to 20 minutes until potatoes are tender and bacon is crisp.
