Ingredients

  • 1 large jar cherry peppers
  • 1/2 lb. thinly sliced Provolone cheese
  • 1/2 lb. thinly sliced Prosciutto
  • 1/2 c. olive oil
  • 1/2 tsp. oregano

Instructions

  1. Drain peppers; set brine aside.
  2. Cut off tops and scoop seeds out of peppers.
  3. Roll slices of Provolone cheese and Prosciutto and slice into 1-inch pieces.
  4. Stuff the cheese and Prosciutto into the peppers spiral side up.
  5. Place the stuffed peppers in a deep-sided dish.
  6. Mix olive oil, brine, oregano, salt, and pepper and drizzle over the peppers.
