Rice Torta

Ingredients

  • 1 cup rice
  • 4 eggs
  • 1 medium zucchini
  • 1/4 to 1/2 onion
  • 1/3 cup fresh parsley
  • 2/3 cup butter
  • 1/4 to 1/3 cup half and half
  • 1 cup Parmesan cheese

Instructions

  1. Cook rice as directed on the package.
  2. Saute onion, zucchini, and parsley in butter.
  3. Mix all ingredients together.
  4. Oil a 9 x 13-inch pan with olive oil.
  5. Pour the rice mixture into the prepared pan.
  6. Bake at 350°F for 30 minutes or until the top is golden brown.
  7. Cool the torta.
  8. Cut into squares.
  9. Let it firm up as it cools.
  10. Serve as an appetizer or side dish.
