Ingredients

  • 2 whole chicken breasts, split, skinned and boneless
  • 4 thin slices cooked ham
  • 4 thin slices Swiss cheese
  • 2 Tbsp. oil
  • 1 can cream of broccoli soup
  • 1/3 cup milk
  • 1/4 cup sliced green onions
  • 1/8 tsp. dried thyme leaves, crushed

Instructions

  1. Place ham and cheese slices on each chicken breast half.
  2. Roll up the chicken from the narrow end to enclose the filling.
  3. Secure each rolled chicken breast with toothpicks.
  4. In a skillet, heat oil over medium heat and cook the chicken for 10 minutes or until browned on all sides.
  5. Remove the chicken and spoon off excess fat from the skillet.
  6. Stir in the cream of broccoli soup, milk, sliced green onions, and crushed thyme leaves.
  7. Heat the mixture until boiling, then reduce the heat to low.
  8. Cover and simmer for 10 minutes or until the chicken is fork-tender.
  9. Remove toothpicks before serving and garnish with parsley if desired.
