Stuffed Cucumber Cups

These refreshing stuffed cucumber cups offer a creamy, flavorful filling perfect for appetizers or light snacks, ideal for parties, gatherings, or healthy snack options.

Ingredients

  • 3 small cucumbers
  • salt and pepper to taste
  • 1 (3 oz.) pkg. cream cheese
  • finely chopped cucumber pulp
  • 1/8 tsp. salt
  • 1/8 tsp. paprika
  • 1 tsp. lemon juice

Instructions

  1. Wash 3 small cucumbers and score lengthwise with a fork.
  2. Cut cucumbers in halves crosswise; cut off ends and hollow out centers, discarding seeds.
  3. Save the cucumber pulp.
  4. Sprinkle the insides of the cucumber cups with salt and pepper.
  5. Chill the cucumber cups for 20 minutes.
  6. In a bowl, mix the cream cheese, finely chopped cucumber pulp, salt, paprika, and lemon juice.
  7. Fill the hollowed cucumber cups with the cream cheese mixture.
  8. Serve on beds of fresh lettuce.
