- Cut cucumbers in halves crosswise; cut off ends and hollow out centers, discarding seeds.
- Save the cucumber pulp.

- Chill the cucumber cups for 20 minutes.
- In a bowl, mix the cream cheese, finely chopped cucumber pulp, salt, paprika, and lemon juice.
