Stuffed Cucumber(Heritage Recipe)

Ingredients

  • 1 large cucumber
  • 2-3 oz. package cream cheese
  • 1 Tbsp chopped pimento
  • 3 Tbsp mayonnaise
  • 1 Tbsp chopped stuffed olives
  • 1 Tbsp chopped ripe olives

Instructions

  1. Cut the cucumber lengthwise and hollow out the center.
  2. Mix cream cheese, chopped pimento, mayonnaise, chopped stuffed olives, and chopped ripe olives to make the filling.
  3. Fill the hollowed cucumber with the cheese and olive mixture, press the cucumber halves back together, and chill for 2 hours.
  4. Slice before serving.
