- Peel the potatoes and onion.
- Finely chop the onion.
- Finely shred the potatoes.
- Combine the shredded potatoes, chopped onion, and salt in a bowl.
- Heat two skillets and divide the butter between them.
- Cook the butter until it is slightly browned.
- Add half of the potato mixture to each skillet.
- Cook for about 8 minutes, stirring once or twice.
- Add grated Cheddar cheese on top of each and firmly press the mixture down.
- Cover and cook for about 5 minutes until the bottom is crisp.
- Quickly turn the potato cakes over and cook on the other side for 5 minutes.
- Optionally, split the potato cakes in half for easier handling.
- Serve immediately.
