Crispy, cheesy potato rosti with caramelized onion and melted Cheddar offers a hearty, comforting dish perfect for breakfast, brunch, or a satisfying snack for cheese and potato lovers.

Ingredients

  • 6 to 8 potatoes
  • 1 large onion
  • 1 tsp salt
  • 3 Tbsp butter
  • 1 1/4 cups grated Cheddar cheese

Instructions

  1. Peel the potatoes and onion.
  2. Finely chop the onion.
  3. Finely shred the potatoes.
  4. Combine the shredded potatoes, chopped onion, and salt in a bowl.
  5. Heat two skillets and divide the butter between them.
  6. Cook the butter until it is slightly browned.
  7. Add half of the potato mixture to each skillet.
  8. Cook for about 8 minutes, stirring once or twice.
  9. Add grated Cheddar cheese on top of each and firmly press the mixture down.
  10. Cover and cook for about 5 minutes until the bottom is crisp.
  11. Quickly turn the potato cakes over and cook on the other side for 5 minutes.
  12. Optionally, split the potato cakes in half for easier handling.
  13. Serve immediately.
