Ingredients

  • 1/2 to 3/4 cup stale whole wheat bread crumbs
  • 1/2 large or 1 small stalk celery
  • 1/2 small tomato
  • 1/2 small onion
  • 8 to 10 large button mushrooms
  • 1/4 cup crabmeat
  • 1/2 teaspoon marjoram
  • black pepper and hot red pepper flakes to taste
  • 3 tablespoons canned white kidney beans or chickpeas

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Remove the centers and stems from the mushrooms with a spoon, setting aside the stems for the filling.
  3. Finely dice the celery, onion, and tomato, and chop the mushroom stems.
  4. In a mixing bowl, combine the bread crumbs, diced celery, tomato, onion, chopped mushroom stems, crabmeat, marjoram, black pepper, red pepper flakes, and white kidney beans.
  5. Stuff each mushroom cap generously with the prepared mixture.
  6. Place the stuffed mushrooms on a baking sheet and bake for about 15 minutes, until heated through and tops are slightly browned.
  7. Serve hot as an elegant first course or appetizer.
