Ingredients

  • 4 to 8 chicken thighs
  • 1 cup ricotta cheese
  • 1 cup thawed, drained frozen spinach, chopped fine
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Skin, debone, and flatten the chicken thighs to an even thickness.
  2. Combine ricotta cheese, chopped spinach, and grated Parmesan cheese in a bowl, mixing well.
  3. Ensure the spinach is well drained before adding.
  4. Spread the cheese mixture onto each thigh, discarding any excess.
  5. Roll up the thighs and secure with a toothpick or kitchen twine.
  6. Spray a baking pan with nonstick spray.
  7. Place the stuffed thighs in the prepared pan and bake at 350°F for about 25 minutes, or until cooked through.
