Stuffed Whole Tomato

A delightful stuffed tomato filled with seasoned rice and ground meat, baked to perfection. This savory dish is ideal for a quick lunch or elegant dinner option.

Ingredients

  • 1 tomato, fresh (medium size)
  • 1/2 cup cooked rice
  • 1 teaspoon butter or margarine
  • 1 to 2 ounces ground beef or chicken

Instructions

  1. Wash the tomato and remove the center.
  2. Sprinkle the hollow of the tomato with a bit of salt and pepper.
  3. Mix the cooked rice with the tomato flesh and ground beef or chicken.
  4. Refill the center of the tomato with the rice and meat mixture.
  5. Place a teaspoon of butter on top of the filled tomato and set it in a lightly buttered pan.
  6. Bake in a 350°F oven for 15 to 20 minutes.
