Tips & Substitutions

For a richer flavor, consider marinating the chicken in a low-fat marinade with spices overnight. If you're short on time, you can substitute the chicken with boneless chicken breasts for quicker cooking. Adjust the potato variety based on your preference, using sweet potatoes for a unique twist. To enhance the dish, add bell peppers or olives during cooking.

Serving Suggestions

Serve this dish over a bed of fluffy cooked rice to soak up the flavorful sauce. A side of roasted vegetables or a fresh green salad pairs wonderfully for a complete meal. For a heartier option, consider serving it alongside crusty bread to mop up the sauce. This Spanish Chicken is also delicious with a glass of red wine.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. When reheating, add a splash of water to the pot to maintain moisture and heat gently on the stove until warmed through. You can also reheat in the microwave, but cover the dish to retain steam.

Frequently Asked Questions

Can I use chicken breasts instead of legs or thighs?

Yes, you can substitute chicken breasts for a leaner option, but be mindful that they may cook faster. Adjust the cooking time to ensure they remain juicy and don’t overcook.

What can I use instead of tomato sauce?

If you don't have tomato sauce on hand, crushed tomatoes or diced tomatoes can be used as a substitute. You can also blend fresh tomatoes to create a similar consistency.

Is it possible to make this dish in a slow cooker?

Absolutely! Brown the garlic and onion first, then add all ingredients to the slow cooker. Cook on low for 6-8 hours or on high for 3-4 hours until the chicken and potatoes are tender.
