- Drain the crushed pineapple and reserve the juice.
- Take 1/2 cup of pineapple juice and stir in cornstarch.
- Boil the juice and cornstarch mixture until thick, then allow to cool.
- Mix milk and light sour cream in a bowl.
- Beat in sugar-free vanilla pudding into the milk and sour cream mixture.
- Fold in lite Cool Whip, drained pineapple, orange peel, nutmeg, and rum extract (if using).
- Pour the filling into the graham cracker crust.
- Chill the pie until set.
- Sprinkle the remaining drained pineapple on top of the pie.
