Ingredients

  • 9-inch graham cracker crust
  • 1 (20 oz.) can crushed pineapple
  • 1 tsp. cornstarch
  • 1 c. milk
  • 1/2 c. light sour cream
  • 1 pkg. sugar-free instant vanilla pudding
  • 1 (4 oz.) carton lite Cool Whip
  • 1 tsp. rum extract (optional)
  • 1 tsp. grated orange peel

Instructions

  1. Drain the crushed pineapple and reserve the juice.
  2. Take 1/2 cup of pineapple juice and stir in cornstarch.
  3. Boil the juice and cornstarch mixture until thick, then allow to cool.
  4. Mix milk and light sour cream in a bowl.
  5. Beat in sugar-free vanilla pudding into the milk and sour cream mixture.
  6. Fold in lite Cool Whip, drained pineapple, orange peel, nutmeg, and rum extract (if using).
  7. Pour the filling into the graham cracker crust.
  8. Chill the pie until set.
  9. Sprinkle the remaining drained pineapple on top of the pie.
  10. Smooth a glaze over the top of the pie before serving.
