Ingredients

  • 1 large carton light sour cream
  • 1 box instant sugar-free vanilla pudding
  • 1 large can crushed pineapple (in own juice)
  • 1 1/2 cups coconut
  • 1 teaspoon vanilla

Instructions

  1. Mix the vanilla pudding with the light sour cream until smooth.
  2. Add the crushed pineapple (with juice) to the mixture and stir well.
  3. Fold in the coconut and vanilla extract until fully incorporated.
  4. Optional: add yellow food coloring for a more vibrant appearance.
