Summer Cold Melon Soup

A refreshing summer cold melon soup blending sweet cantaloupe and honeydew with citrus and champagne, perfect for warm days and elegant gatherings.

Ingredients

  • 3 c. coarsely chopped cantaloupe
  • 3 c. coarsely chopped honeydew melon
  • 2 c. fresh orange juice
  • 1/3 c. fresh lime juice
  • 3 Tbsp. honey
  • 2 c. brut champagne or dry white wine
  • fresh mint leaves

Instructions

  1. Finely chop half of the cantaloupe and honeydew and set aside.
  2. Puree the remaining melon in batches with orange juice, lime juice, and honey in a food processor or blender.
  3. Pour the pureed mixture into a large bowl.
  4. Stir in the reserved chopped melon and champagne or white wine.
  5. Cover and chill the soup for several hours.
  6. Garnish each serving with fresh mint leaves before serving.
