Ingredients

  • 4 boneless skinless chicken breasts
  • 1/3 cup olive oil
  • juice of 3 limes
  • 4 cloves garlic
  • 3 tablespoons fresh chopped cilantro
  • salt and pepper or other spices to taste

Instructions

  1. Using a kitchen mallet, pound the chicken breasts to 1/2 inch thickness.
  2. Combine olive oil, garlic, and lime juice to create a marinade. Marinate the chicken for 2 hours.
  3. Grill or broil the chicken until cooked through.
  4. Squeeze additional lime juice over the cooked chicken.
  5. Optionally, stir-fry vegetables to serve alongside or as a side dish.
  6. Chicken tastes even better when served cold.
