Ingredients

  • 2 lb. lean hamburger
  • 3 Tbsp. Morton Tender Quick cure salt
  • 1/8 tsp. garlic salt
  • 1/8 tsp. onion salt
  • 2 tsp. mustard seed
  • 1 c. water

Instructions

  1. Mix all ingredients together well with hands, then leave in a bowl and refrigerate for 24 hours.
  2. Make into 2-inch rolls that are about 6 to 8 inches long.
  3. Wrap each roll in foil, shiny side turned toward the meat. Slit the bottom of the foil in two places.
  4. Place on a rack or cookie sheet and bake at 300°F for 1 hour.
  5. Chill in refrigerator.
  6. Slice when ready to use.
