Ingredients

  • 2 lb. mixed summer squash (yellow crookneck, zucchini), sliced thin
  • 2 Tbsp. chopped bell pepper
  • 1 small tomato, sliced
  • 1 small onion, sliced
  • 1/4 cup butter or margarine
  • seasoned salt, pepper and Italian herbs to taste
  • grated Mozzarella cheese

Instructions

  1. Sauté vegetables in butter for 3 minutes.
  2. Add seasonings, cover and simmer until tender.
  3. Remove lid from saucepan, sprinkle with cheese, return lid and turn off heat.
  4. Allow cheese to melt before serving.
