A quick and vibrant sauté of fresh spinach with garlic and balsamic vinegar, perfect for a healthy side or light meal suited for busy weeknights.

Ingredients

  • 1 tsp. olive oil
  • 1 to 2 cloves garlic, crushed
  • 1 lb. fresh spinach, thoroughly washed, tough stems removed, then torn into bite-sized pieces
  • 1 Tbsp. balsamic or red wine vinegar
  • fresh ground black pepper to taste

Instructions

  1. In a large frying pan with a lid, heat the olive oil over medium heat.
  2. Add the crushed garlic and cook for 1 to 2 minutes until fragrant.
  3. Add the fresh spinach to the pan and cook until wilted, about 2-3 minutes.
  4. Stir in the balsamic or red wine vinegar and season with fresh ground black pepper to taste.
  5. Serve immediately.
