Ingredients

  • 2 c. pancake mix
  • 2 (7 oz.) pkg. Italian salad dressing mix, divided
  • 1/3 c. club soda
  • 1 egg
  • 3 lb. chicken pieces

Instructions

  1. Combine pancake mix and one package of Italian salad dressing mix; mix well and set aside.
  2. Combine club soda, beaten egg, and remaining package of Italian salad dressing mix; stir well.
  3. Dip chicken pieces into the club soda mixture, then dredge in the pancake and dressing mix coating.
  4. Allow chicken to drain for 5 minutes before frying or serving.
