Ingredients

  • 6 cups potatoes, coarsely chopped
  • 1/2 medium onion, finely chopped
  • 2 chicken bouillon cubes
  • 2 cups milk
  • 1 cup Velveeta cheese, cubed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Place potatoes and onion in enough water to cover potatoes. Add salt.
  2. Bring to a boil, then lower heat and simmer until potatoes are just done.
  3. Do not drain the water.
  4. Add chicken bouillon cubes and simmer for 5 minutes.
  5. Add milk and Velveeta cheese cubes.
  6. Continue to simmer until cheese is melted.
  7. Add black pepper and remove from heat.
