Ingredients

  • 1 small chicken breast
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1 (10 3/4 oz.) can condensed cream of chicken soup
  • 1 (8 3/4 oz.) can whole kernel corn
  • 1/2 cup milk
  • 1/2 cup shredded American cheese
  • 2 tablespoons chopped pimiento

Instructions

  1. In a saucepan, combine the whole small chicken breast, chopped onion, chopped celery, and 1/2 cup water. Bring to a boil; reduce heat.
  2. Cover and simmer for 15 to 20 minutes. Remove the chicken when cool enough to handle.
  3. Cut off the meat and chop it into small pieces.
  4. Discard skin and bones.
  5. Return the chopped chicken to the broth.
  6. Stir in the condensed cream of chicken soup, whole kernel corn, milk, shredded American cheese, and chopped pimiento.
  7. Cook, covered, for 10 minutes.
