Ingredients

  • 2 cups sifted plain flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 cup shortening
  • 1 cup sugar
  • 3/4 cup milk
  • 1 teaspoon vanilla
  • 3 egg whites

Instructions

  1. Sift the flour once.
  2. Add baking powder and salt to the sifted flour.
  3. Cream the shortening until smooth.
  4. Gradually add sugar to the shortening and beat until fluffy.
  5. Alternately add the flour mixture and milk to the creamed mixture, beginning and ending with flour.
  6. Add vanilla extract and mix well.
  7. Beat egg whites until soft peaks form.
  8. Gradually add 1/4 cup of sugar to the egg whites and beat until stiff peaks form.
  9. Gently fold the beaten egg whites into the batter.
  10. Pour the batter evenly into two 8-inch cake pans.
  11. Bake at 375°F (190°C) for 25 minutes or until a toothpick inserted in the center comes out clean.
