Ingredients

  • 7 lb. cucumber or green tomatoes, sliced
  • 3 c. lime
  • water
  • 1 small box alum
  • 1 small box ground ginger
  • 3 pt. vinegar
  • 5 lb. sugar
  • 1 tsp. pickling spice

Instructions

  1. Soak cucumbers or green tomatoes in 3 cups lime and 2 gallons water for 24 hours.
  2. Rinse the cucumbers or green tomatoes thoroughly.
  3. Soak in 2 gallons water for 24 hours.
  4. Soak in alum and 2 gallons water for 24 hours.
  5. Soak in ground ginger and 2 gallons water for 16 hours.
