Ingredients

  • 3/4 cup sugar
  • 1 teaspoon dry mustard
  • 1 1/3 cups cider vinegar
  • 1/2 teaspoon salt
  • 1 teaspoon whole allspice
  • 2 bay leaves
  • 1 pound fresh carrots, cut in 1 1/2-inch pieces
  • 4 ears fresh corn, cut crosswise in 1-inch pieces

Instructions

  1. In a medium saucepan, mix sugar and dry mustard.
  2. Stir in 1/3 cup water and remaining ingredients, except corn.
  3. Bring to a boil, then let cool for 20 minutes.
  4. Place corn in a bowl.
  5. Add carrots and marinade.
  6. Cover and refrigerate for 2 hours before serving.
