Ingredients

  • 2 packages cherry Jell-O
  • 1 cup boiling water
  • 1 cup cold water
  • 1 (No. 2 1/2) can Bing cherries
  • 1 (14 oz.) can crushed pineapple
  • 1 cup heavy cream
  • 1 (3 oz.) package low calorie cream cheese

Instructions

  1. Dissolve the cherry Jell-O in boiling water; then add cold water and juice from drained cherries and pineapple.
  2. Drain cherries and pineapple; place fruit in the bottom of a ring mold.
  3. Pour half of the slightly thickened gelatin over the fruit in the mold.
  4. Chill until set.
  5. Whip the heavy cream; add the cream cheese and whip until blended.
  6. Add the remaining gelatin to the whipped cream mixture and mix well.
  7. Pour the cream mixture over the chilled gelatin and fruit in the mold.
  8. Chill overnight before serving.
