Ingredients

  • 1/2 lb acini de pepe macaroni
  • 1 can mandarin oranges
  • 1 large can crushed pineapple
  • 2 eggs
  • 1/2 cup sugar
  • 2 tablespoons flour

Instructions

  1. Cook acini de pepe macaroni according to package instructions, adding salt as required.
  2. Drain the cooked macaroni and put it in a bowl.
  3. In a separate bowl, beat sugar, flour, and eggs together.
  4. Add the drained juice from mandarin oranges and crushed pineapple to the beaten mixture.
  5. Cook the mixture over medium heat, stirring constantly until it thickens.
  6. Pour the cooked thickened mixture over the cooked macaroni and stir well.
  7. Let the salad set in the refrigerator overnight.
  8. The next day, fold in the drained mandarin oranges and crushed pineapple, then top with Cool Whip before serving.
