  • 3 lb. sweet peppers including green, yellow, and/or red
  • 2 C sugar
  • 2 C white vinegar
  • 2 C water
  • 4 tsp. olive oil
  • 2 tsp. salt
  • 8 cloves garlic peeled (optional)

Instructions

  1. Sterilize four 1-pint jars by leaving them covered with hot water.
  2. Wash new jar lids and cover them with boiling water.
  3. Wash and prepare the sweet peppers, removing stems if desired.
  4. In a large pot, combine sugar, white vinegar, water, olive oil, salt, and garlic if using.
  5. Bring the mixture to a boil, stirring until sugar is dissolved.
  6. Add the sweet peppers to the boiling mixture and cook for a few minutes until slightly tender.
  7. Pack the hot peppers into sterilized jars, leaving appropriate headspace.
  8. Pour the hot vinegar mixture over the peppers, covering completely.
  9. Seal the jars with prepared lids and process in a boiling water bath if desired for preservation.
