Ingredients

  • 6 lb. small cucumbers
  • 1 large sweet red pepper
  • 1 onion
  • 2 cloves garlic
  • 3/4 c. pickling salt
  • 2 qt. crushed ice
  • 4 c. sugar
  • 3 1/2 c. vinegar (5% acidity)

Instructions

  1. Wash cucumbers; trim ends.
  2. Cut cucumbers into 1/4-inch slices.
  3. Combine cucumber slices, red pepper, onion, and garlic in a large bowl.
  4. Add salt and stir well.
  5. Pack crushed ice over cucumbers; cover and let stand 24 hours.
  6. Drain well.
  7. Rinse cucumber mixture several times in cold water; drain well.
  8. Remove and discard garlic.
  9. Pack cucumber mixture into hot, sterilized jars, leaving 1/2 inch headspace.
