Ingredients

  • 1 gal. cucumbers
  • 1 gal. water
  • 2 c. salt
  • alum
  • apple cider vinegar
  • sugar
  • spice

Instructions

  1. Wash cucumbers and cut into chunks.
  2. Boil 1 gallon of water with 2 cups of salt.
  3. Pour the hot brine over cucumbers in a crock jar or plastic bucket.
  4. Weigh down the cucumbers to keep them submerged.
  5. Let set for 8 days.
  6. Drain and rinse the cucumbers well.
  7. Cover with 2 ounces of alum per gallon of boiling water and let set for 24 hours.
  8. Drain and rinse the cucumbers once.
  9. Cover with apple cider vinegar.
  10. Let set for 8 to 24 hours.
  11. Drain the cucumbers.
  12. Layer cucumbers, sugar, and spice (use 10 pounds of sugar to 4 gallons of pickles), and let stand for 2 days to make its own syrup.
  13. Stir the mixture.
  14. Let stand for 2 or 3 more days.
  15. Can the pickles or leave them in a crock for storage.
