Ingredients

  • small onions, peeled
  • green tomatoes, quartered or halved
  • large green sweet peppers, cut into 1-inch strips
  • 2 stalks dill
  • 1 Tbsp. mixed pickling spice
  • pinch of alum
  • 1 qt. water
  • 1 pt. vinegar
  • 2 Tbsp. salt

Instructions

  1. Use equal amounts of small peeled onions, green tomatoes (quartered or halved), and large green sweet peppers (cut into 1-inch strips).
  2. Combine the vegetables with dill stalks, pickling spice, and a pinch of alum in a large jar or container.
  3. In a saucepan, bring the water, vinegar, and salt to a boil to create the brine.
  4. Pour the hot brine over the vegetables, ensuring they are fully submerged.
  5. Seal the jar and let it cool to room temperature, then refrigerate for at least 24 hours before serving for best flavor.
