Ingredients

  • 7 lb. watermelon rind
  • 4 lb. sugar
  • 1 pt. vinegar
  • 1/2 tsp. oil of cloves
  • 1/2 tsp. oil of cinnamon

Instructions

  1. Pare rind from watermelon.
  2. Cover the rind with water and simmer until tender, about 30 minutes.
  3. Drain the rind.
  4. Make syrup by bringing sugar, vinegar, and oils of cloves and cinnamon to a boil.
  5. Pour the hot syrup over the drained rind.
  6. Let stand overnight before serving.
